Breakfast Cookies

I'm terrible at making myself breakfast. I don't particularly like eating first thing, and by the time I remember I haven't eaten breakfast, it's time for lunch. Yesterday, I decided to test out a few breakfast cookie recipes I found online. I combined ingredients from 3 and came out with the perfect breakfast cookie for me. Good fats, Gluten-free, lots of protein, and high in fibre, oh, and they are vegan!

Dry Ingredients 1 Cup Oat Flour oats in a food processor or blender pulse until fine 1 Cup Oats 12 Almond Flour 12 TSP Cinnamon 12 TSP Baking Powder 12 TSP Baking Soda 14 TSP Sea Salt.PNG
