Breakfast Cookies

I'm terrible at making myself breakfast. I don't particularly like eating first thing, and by the time I remember I haven't eaten breakfast, it's time for lunch. Yesterday, I decided to test out a few breakfast cookie recipes I found online. I combined ingredients from 3 and came out with the perfect breakfast cookie for me. Good fats, Gluten-free, lots of protein, and high in fibre, oh, and they are vegan!

Lemon Bundt Cake

This lemon delight is perfect for Mother's Day or any occasion this summer. It's simple and beautiful. I did make a glaze with icing sugar and lemon juice, but the organic icing sugar makes it off-white and almost invisible, so I sifted a small amount of icing sugar on time to add some colour.
